How to read this chart

Find your ingredient in the left column, then read across to the amount you have. For example, the flour row at 100 grams reads 0.83 cups, and the sugar row at 200 grams reads 1 cup. Values are rounded to two decimal places, so tiny rounding differences of a gram or two are normal.

For amounts above 250 grams, use the same idea in reverse: divide your grams by the ingredient’s grams-per-cup value, or use the converter. For amounts between the columns, such as 125 grams, the value sits halfway between the 100-gram and 150-gram columns.

Notes on accuracy

Flour and brown sugar are the two ingredients where packing changes the result most. The chart assumes flour is spooned and leveled, and brown sugar is packed firmly. If you scoop flour or leave brown sugar loose, your real values will differ. For salt, the chart assumes fine table salt; coarse salt weighs far less per cup, so weigh salt whenever accuracy matters.
